How to Make a Really Different Pasta Dish? Make this Old Fashion Chili Lasagna

I got this recipe many years ago from a Home Economics teacher.  It is an excellent dish for those who like things spicy.  For the uninitiated, use less chili powder.  This is a good dish for pitch-in meals, potlucks, church socials, etc. as it feeds several.  It is also just a good family dish.  It makes a great meal when you add a salad.   For dessert serve something light and cool like the Pineapple Mallow recipe below.CHILI LASAGNA1 pkg lasagna noodles1 lb ground beef1/2 cup chopped green bell pepper1/2 cup chopped onion1 can diced tomatoes with the juice1/4 cup chili powder3 8-oz cans tomato sauce1 tsp salt1/4 tsp black pepper1 pkg (8-oz) cheese slices, cut into stripsCool lasagna noodles according to the package directions and drain well.Preheat oven to 350 degrees.Saute beef, bell pepper, and onion in a skillet for 10 minutes or until the beef is browned and the veggies are crisp tender. Drain. Return mixture to the pan and add the tomatoes, tomato sauce, chili powder, salt, and pepper. Stir and set aside. In a 13 x 9-inch baking pan, arrange a layer of lasagna noodles. Put a layer of the meat mixture then a layer of cheese over the noodles. Repeat the layers, ending with cheese. Bake at 350 degrees for 40 minutes or until heated through and bubbly.

REFRIGERATOR PINEAPPLE MALLOW1 lb marshmallows1/2 cup milk1 #2 can crushed pineapple1 pint heavy cream, whipped1/2 cup chopped walnuts1 1/3 cups Graham cracker or vanilla wafer crumbsMelt marshmallows in milk over hot water. Add crushed pineapple and cool; then add whipped cream and walnuts. Line a 13×9-inch pan with 1 cup of crumbs. Pour the pineapple mixture in. Sprinkle remaining crumbs over top. Let stand in refrigerator overnight. Cut in squares and serve with additional whipped cream, topped with a maraschino cherry.To Freeze: Prepare pan by lining with aluminum foil. Then proceed as above. When thoroughly chilled, wrap pan completely in foil, seal and freeze.To Prepare Frozen Dessert for Eating: Remove outer wrapping of foil. Let stand 1 1/2 hours in refrigerator before serving. Enjoy!

How To Make Homemade Italian Lasagna

My husband comes from an Italian family, so he grew up eating authentic Italian food. Shortly after we got married, my mother-in-law invited me over to her home so that I could learn to make their family lasagna recipe. We spent the afternoon making homemade garlic bread, salads and of course, the lasagna.Here is the recipe that she passed down to me, and now I am passing it down to my daughter.Italian Lasagna RecipeSauce:2 tablespoons olive oil2 small onions, finely chopped1 teaspoon table salt1/2 teaspoon black pepper1/2 teaspoon garlic powder2 lb. lean ground beef2 (6 ounce) cans tomato paste2 (15 ounce) cans tomato sauce2 teaspoons granulated sugar1 cup waterFilling:1 lb. Mozzarella cheese, shredded2 packages frozen chopped spinach, cooked and well drained2 (8 ounce) packages cream cheese, softened3 eggsbread crumbsParmesan cheese, gratedsalt to tastepepper to tastegarlic powder to tasteIn a large saucepan, brown the finely chopped onions in 2 tablespoons olive oil. Add in the lean ground beef, salt, black pepper and garlic powder. Fry the beef until its done and no longer pink. Drain off the excess grease and discard. Stir in the rest of the tomato sauce ingredients and heat the sauce over medium heat for 10 minutes and then turn the heat down to low and simmer sauce for 30 minutes. In a medium sized bowl, combine all of the filling ingredients. Use enough bread crumbs to hold the mixture together. In a large stock pot, cook the lasagna noodles in hot salted water according to package directions. Drain water and set aside.In a large rectangular baking dish, alternate layers of sauce, pasta noodles and filling until all ingredients are used. Sprinkle the top with grated Parmesan cheese. Cover the baking dish with one layer of aluminum foil. Bake in a 350 degree oven for 1 hour, remove foil from baking dish and bake for an additional 15 minutes.

How to Make a Fresh Vegetable Lasagna that is Diabetic Friendly

If you don’t like meat or you are just trying to cut back on the meat in your diet, here is a fresh vegetable lasagna for you.  One of the key words here, is fresh.  You will notice this recipe does not use canned vegetables.  And this recipe is okay for diabetics, too, since it has a great protein to carb ratio.

FRESH VEGETABLE LASAGNA8-oz uncooked lasagna noodles1 pkg (10-oz) frozen chopped spinach, thawed and squeezed dry1 cup shredded carrots1/2 cup sliced green onions1/2 cup sliced green bell pepper1/4 cup chopped parsley1/2 tsp black pepper1 1/2 cups 1% lowfat cottage cheese1 cup buttermilk1/2 cup plain nonfat yogurt2 egg whites1 cup fresh sliced mushrooms1 can (14-oz) artichoke hearts, drained and chopped2 cups (8-oz) shredded part-skim mozzarella cheese

1/4 cup grated Parmesan cheeseCook noodles according to the package directions, omitting salt.  Drain.  Rinse under cold water until cool; drain well.  Set aside.Preheat oven to 375 degrees.  Combine spinach, carrots, green onions, bell pepper, parsley, and black pepper in a large bowl.  Set aside.Combine cottage cheese, buttermilk, yogurt, and egg whites in a food processor or blender and process until smooth.Spray a 9 x 13-inch baking pan with nonstick cooking spray.  Arrange 1/3 of the noodles in the bottom of the pan.  Spread with half each of cottage cheese mixture, spinach mixture, mushrooms, artichokes, and mozzarella cheese.  Repeat layers ending with lasagna noodles on top.  Sprinkle Parmesan cheese over the top.  Cover and bake for 30 minutes.  Remove the cover and continue baking 20 minutes or until bubbling and heated through.  Let stand 10 minutes before cutting to serve.Yield: 8 servings.  Per serving: 250 calories, 26 g carbs, 22 g proteinThe protein to carb ratio makes this a good diabetic pasta dish, especially for those diabetics who don’t like meat.Enjoy!

–Olive Garden Lasagna–

Alfredo Sauce:

1/2 lb. sweet or salted butter

12 oz. heavy cream

Fresh ground white pepper

1 1/2 cups fresh Parmesan, grated

Ricotta Cheese Mix:

1 pint Ricotta cheese

2 oz. Romano, grated

3 oz. Mozzarella, shredded

2 tbls. green onions, sliced

2 teas. fresh parsley, chopped

1/2 teas. salt

1/8 teas. black pepper

1/4 teas. dried basil

1/4 teas. dried oregano

1 1/4 cups Alfredo sauce, cooled

Vegetable Mix:

4 cups broccoli florets

2 cups carrots, sliced 1/4″

4 cups fresh mushrooms, sliced 1/4″

2 cups red bell peppers, diced

1 cup green bell pepper, diced 1 cup yellow onion, diced

2 cups zucchini, sliced

Lasagna noodles

18 slices Mozzarella cheese, 1/2 oz. each

Lay out enough dry lasagna strips in a 9×13 pan to ensure you have enough to make 3 full layers, with very little overlap on each layer. Remove the dry strips and cook according to package instructions until barely “al dente” and drain.

ALFREDO SAUCE: Heat water to a boil in the bottom of a double boiler. Add butter, cream and pepper to the top pot and heat until butter is completely melted, then stir in Parmesan until melted and blended.

Remove top pot and set aside to cool. Divide the Olive Garden Lasagna 307 sauce into 2 equal portions. Refrigerate 1 portion for use later.

RICOTTA CHEESE MIX: Combine all ingredients in a bowl and blend thoroughly with a rubber spatula. Set aside at room temp.

VEGETABLES: Combine all veggies and mix well.

ASSEMBLY: Coat the bottom and sides of a 9×13 baking dish with vegetable spray. Lay out cooked lasagna strips (about 4) to cover entire bottom. Spread 1-1/4 c of the Ricotta mix evenly over the strips. Top with 8 c of veggie mix and spread out evenly. Lay out 9 of the mozzarella slices to cover the veggie layer. Repeat this layering. Top the second layer of mozzarella slices with lasagna strips and spread them evenly with 1-1/4 c ricotta cheese mix to finish.

COOKING: Spray a sheet of foil with vegetable spray and cover the baking dish tightly with the foil, sprayed side down. Bake in a preheated 375F oven for about an hour or until the internal temp is 165F. Remove from the oven and allow to sit for a few minutes, covered, before cutting and serving. Immediately prior to serving, heat the reserved portion of Alfredo Sauce and ladle the hot sauce over each slice of lasagna as it is served.

 

–Olive Garden Pasta Frittata–

12 Ounce spaghetti, cooked, cut into 2″ pieces

3 Ounce green onions, sliced

3 Ounce thick bacon, cooked and chopped

vegetable spray or margarine

3 tblsp Fontina, shredded, heaping

Parmesan, grated

3 3/4 cup

FRITTATA BATTER: 6 Medium eggs

2 1/2 cups Half and half

5 Teaspoon cornstarch

1 dash nutmeg

Preheat oven to 350F.

 

FRITTATA BATTER: Beat eggs, half and half, cornstarch, salt and nutmeg thoroughly until all ingredients are completely blended. Blend the 2″ spaghetti pieces, green onion rings and bacon pieces in a bowl until evenly mixed.

Coat a 1-1/2 qt round baking dish, including walls, with spray or margarine. Empty the spaghetti mixture into the baking dish and spread evenly. Add the frittata batter to cover the filling mix.

Bake in a 350~ oven for about 25 minutes until center is set. When center is set, cover the frittata evenly with the Fontina and bake until cheese is golden. Turn off the heat and open oven door. Let the frittata set in the open oven for 15 minutes for the batter to set more firmly and make removing from the dish easy. Before serving, sprinkle with Parmesan and cut into 4 wedges.

 

–Olive Garden Shrimp Primavera–

SAUCE:

6 tbsp. butter or margarine

1 tbsp. garlic, fresh, minced

1 oz. package Knorr Newburg Sauce Mix (or similar)

32 oz. crushed tomatoes, canned

1-1/2 tbsp. lemon juice, fresh

1/4 tsp. (or to taste) red pepper, crushed

1/2 tsp. basil, dry

1/4 tsp. marjoram, dry

1/2 tsp. black pepper

VEGETABLES:

1/2 lb. mushrooms, halved (or quartered if large)

1 cup green bell peppers, cut into 1″ squares

1 cup red bell peppers, cut into 1″ squares

1/2 cup yellow onion, cut into 1″ squares

2 Tbsp. butter for sauting

PASTA:

1 lb. fresh Olive Garden Linguine (or quality dry pasta)

SHRIMP:

1 lb. medium to large fully cooked shrimp, thawed and drained Melt butter in 3-quart saucepan over medium heat. Add garlic and cook one minute. Add remaining spice and tomato ingredients, stir well and simmer for 10 minutes.

Meanwhile, in a large saute pan, melt 2 tbsp. butter. Saute vegetables about 3 minutes until crisp – tender. Add to the sauce and simmer 5 minutes more.

Cook pasta according to directions. When pasta is almost done, stir shrimp into sauce to heat through. Do not boil. Spoon Primavera over hot linguine. Pass Parmesan cheese.

 

–Olive Garden Capellini Pomodoro–

3 cloves Garlic, mince

2 pounds Plum tomatoes; seeded, diced

1 ounce Fresh basil leaves, minced

1/3 cup Extra virgin olive oil

3 ounces Parmesan cheese

12 ounces Dry angel hair pasta, cooked

1/4 teaspoon Pepper

Heat olive oil and add garlic; cook until it turns white. Add tomatoes and pepper and heat through, stirring constantly, about 2 to 3 minutes. Tomatoes should not lose their shape.

Remove from heat. Transfer hot, cooked pasta to large bowl. Toss pasta gently with tomato mixture, basil and half of Parmesan cheese.

Serve immediately and pass remaining Parmesan.

 

–Olive Garden Fettucine Alfredo–

8 ounces Cream cheese — cut in bits

3/4 cup Parmesan cheese — grated

1/2 cup Butter or margarine

1/2 cup Milk

8 ounces Fettuccine; cook — drain

In large saucepan combine cream cheese, Parmesan, butter and milk, stirring constantly until smooth. Toss pasta lightly with sauce, coating well. Leftovers freeze well.

 

 

–Olive Garden House Dressing–

8 ounces Paul Newman’s Vinegar and Oil Dressing

1 clove garlic, peeled and minced

1/2 teaspoon Dried basil 1/2 teaspoon Dried oregano

3 packages Sweet and Low — or 1 tablespoon Sugar

Put ingredients into the bottle of dressing and shake well. Refrigerate 24 hours before using.

 

–Olive Garden Tiramisu Dessert–

1 Sponge cake, (10 to 12 inch about 3″ tall)

3 ounces Strong black coffee, or instant espresso

3 ounces Brandy or rum

1-1/2 pounds Cream cheese or mascarpone, room temperature

1-1/2 cups Superfine/powdered sugar

Unsweetened cocoa powder

Cut across middle of sponge cake forming two layers, each about 1 1/2 inches high.

Blend coffee and brandy. Sprinkle enough of mixture over bottom half of cake to flavor it strongly. Don’t moisten cake too much or it may collapse on serving.

Beat room-temperature cheese and 1 cup sugar until sugar is completely dissolved and cheese is light and spreadable. Test for sweetness during beating, adding more sugar if needed.

Spread cut surface of bottom layer with half of the cheese mixture. Replace second layer and top this with remaining cheese mixture. Sprinkle top liberally with sifted cocoa.

Refrigerate cake for at least 2 hours before cutting and serving.

Lasagna Gardening – Gardening The Easy Way!

Whether  you are a beginning gardener or an experienced one, nobody likes to get an area ready for planting.  The weeding, tilling and preparing the soil can be back-breaking work.   Lasagna gardening is here to rescue your back and to provide you with a bountiful garden.

If  you are disappointed that this has nothing to do with lasagna, there is still hope.  You will be able to make a great lasagna with the tomatoes and herbs from the garden you grew using the lasagna gardening method.  And you can make the lasagna in the time that  you save not having to fight weeds, bugs and other common gardening problems.   Lasagna gardening is the answer to many gardeners’ prayers!

So, what is this magical type of gardening?  It is a form of gardening that is based on layers.  That is why it has it’s name.  Using this method of gardening, first brought to us by Patricia Lanza, you build the garden up.  No more digging and spending large amounts of time trying to produce the perfect soil.  You will create a nutrient-rich soil by building your garden up in a raised bed environment that will be free of many of the problems that gardeners hate to encounter.

You will create your gardening environment by layering items such as newspapers, mulch and other items that are good for your particular location.  These could be grass, hay, straw, etc.  You will be amazed at how quickly you are able to build up to 18″ and have a gardening area ready for planting.  You will have the optimum growing conditions that require less water than normal gardens.

How to Make a Lasagna Garden

If you want a garden, but think that you do not have the time or energy for all that digging and weeding that it would take to get a garden spot ready, then you should consider a lasagna garden. This method of gardening gives you fluffy rich soil with very little work on your part.
Another name for lasagna gardening is sheet composting. This method is environmentally friendly and best of all, requires that you do little to no digging. You just keep adding your kitchen and yard waste to the garden and compost in place to make the new garden.
To begin a lasagna garden, you do not have to dig. The existing weeds and sot can remain right where they are. You just start putting down layers over them. The first layer is either corrugated cardboard or newspaper. If using newspaper, you will need at least three layers. Use a garden hose to wet everything down and keep it in place. The weeds or grass that are underneath will just break down and become part of the compost pile. They will help to attract the friendly earthworms who will loosen your soil underneath the lasagna garden.
You can add anything to the lasagna garden that you would put into a compost pile. Those organic materials will break down and make a very rich soil that you can plant. Here are some ideas of ingredients for your lasagna: leaves, grass clipping, fruit or vegetable scraps, tea leaves or bags, coffee grounds, weeds that have not gone to seed, compost manure, seaweed, pine needles, shredded newspaper, garden trimmings and peat moss.
Add these in the ratio of two to one. This means that you need two times as much brown materials as green. Alternate the layers until you have a stack about two feet tall. The garden will shrink in only a few weeks.
Fall is the perfect time to start the lasagna garden. The leaves are abundant and the compost can form over the winter. It will be ready for planting in the spring.
To plant the garden, just dig down in the bed like any garden. Your shovel should cut right through the newspaper, but you may need to cut holes in the cardboard. Care for the garden like any other garden. Water and weed as necessary and keep planting until you fill the garden.
You can continue to add layers of clippings, straw and other materials while the garden is growing.
With the lasagna garden, there should be very few weeds. The garden should take less water than a normal garden as it is designed to retain water. You may not need any fertilizer since the garden is planted in almost pure compost. The soil should be easy for you to work.
You will find that lasagna gardening is an easy way to make a new garden. You should have a great garden full of fresh produce all during the growing season. This is one way to be sure that your family gets that healthy diet they need.

Low Fat Lasagna Ingredients Listing

Making low fat lasagna can be a bit of a trick, if you normally use regular store bought groceries.  This lasagna can be made by replacing some the normal ingredients with more natural ingredients.  Here some of the substitutions that you will have to make.

 

 

You want to use only low fat hamburger meat.  If you have decided to make this lasagna vegetarian, then this will indeed be low fat lasagna.  Make sure to avoid pork or any type of sausage meat.

 

The meat you use needs to be low fat.  You can use hamburger meat but stay away from pork.  When you finish cooking the meat make sure you get as much grease out by squeezing the meat.  Now you can choose not to use meat and go vegetarian.  This is a great way to create a tasty low fat lasagna.

 

Onions and Garlic – Always use fresh onions and garlic and avoid the dehydrated kind.  Dehydrated or processed spices have other additives.  These additives can be stored as fat.  Processed spices have fewer nutrients and are unbalanced food that can cause disease in the long run.  Mushrooms should be natural and not from a can.

 

Salt – For the food that you salt, you should use sea salt.  Sea salt contains minerals that regular salt does not and is a natural product.  Do use too much salt, since this will cause you to gain weight.  Salt in your body attracts water and your body will retain more water than necessary.  This is another secret of making low fat lasagna.

 

The Lasagna sauce you make should have tomato sauce without sugar.  You can make the Vegetable Marinara Sauce that is on the home page.  This will bring your low fat lasagna to an even lower level.

 

The Olive oil you want to use for this lasagna is fresh cold pressed.  Pick those bottles that are dark since they protect the olive oil from becoming rancid.

 

The Cheeses you use in this low fat lasagna will determine how low fat this lasagna is.  You want to use on block cheese, since this cheese is processed less. Pick low fat cheese for this lasagna.  You never want to use the sliced cheeses.  These cheeses are processed and have a lot of additives. Using these types of ingredients will reduce the fat in your lasagna.  Now you can enjoy eating this lasagna without worrying that you’re going to gain a lot of weight.  You don’t have to run the extra mile to get rid of the fat in this low fat lasagna.

Lasagna Gardening

No digging is one of the best things about lasagna gardening is how easy it is. The first layer of your lasagna garden consists of either brown corrugated cardboard or three layers of newspaper laid directly on top of the grass or weeds in the area you’ve selected for your garden. Anything you’d put in a compost pile, you can put into a lasagna garden. The following materials are all perfect for lasagna gardens. Peat moss just as with an edible lasagna, there is some importance to the methods you use to build your lasagna garden. Just layer browns and greens, and a lasagna garden will result. You can make a lasagna garden at any time of year. You can let the lasagna garden sit and break down all winter. Also, fall rains and winter snow will keep the materials in your lasagna garden moist, which will help them break down faster. If you choose to make a lasagna garden in spring or summer, you will need to consider adding more soil-like amendments to the bed, such as peat or topsoil, so that you can plant in the garden right away. If someone told me years ago that he or she had found a way to do an end run around the sweat equity of traditional gardening, a way around digging, weeding, and rot tilling, a way to produce more regardless of time constraints, physical limitations, or power-tool ineptness well, I would have checked that person for a head injury.

 By spring, the lasagna bed will have composted to ideal soil conditions for asparagus. Once I have a lasagna bed in place, I plant bush bean seeds along the edges. In late May, I transplanted sweet peppers and basil starts to one lasagna bed and planted cantaloupes and flowers in the other. Those two lasagna beds outperformed the traditional beds in every way. Pat Skaggs, president of the Memphis Herb Society, started her shady lasagna bed about three years ago after Lanza spoke here. I’d refer you to the Composting Forum but sometimes a simple project like building a lasagna bed results in much excellent but often complicated answers. No digging is one of the best things about lasagna gardening is how easy it is. I am sure many of you have heard of lasagna gardening I know most of you have eaten great lasagna but how many of you have eaten vegetables, herbs and grown flowers from a lasagna garden? This can also be referred to as no dig gardening or even the term sheet mulching has been used in identifying this style of gardening. This type of gardening was eventually called no dig gardening. How compact is your base soil which you are about to cover? If the soil is badly compacted you may have to deviate from no dig gardening to just a little digging. Instead, lasagna gardening is a timesaving organic gardening method developed by gardener and writer, Patricia Lanza, which requires no digging, no tilling and no sod removal. Lasagna in the Healthy Style

This Italian Lasagna has less fat and calories, but all of the taste. Using low-fat cheeses and extra-lean ground beef saves 100 calories and 10 grams of fat per serving.

Ingredients 1 pound extra-lean ground beef1 onion, chopped1 1/2 teaspoons dried basil3/4 teaspoon oregano3/4 teaspoon garlic powder1 can (6 ounces) unsalted tomato paste1 can (8 ounces) unsalted tomato sauce3 1/2 cups water3/4 pound uncooked lasagna noodles1 cup low-fat cottage cheese3 cups shredded low-fat mozzarella cheeseDirections 1. Preheat the oven to 325 F. Lightly coat a 9-by-13 pan with cooking spray.2. To make the sauce, in a large saucepan combine the ground beef and onion. Cook over medium heat until the ground beef is browned and onion is translucent. Drain well.3. Add the basil, oregano, garlic powder, tomato paste, tomato sauce and water. Stir to mix evenly.4. Bring to a boil, reduce heat and simmer for 10 minutes.5. Put 1/2 cup of the sauce in the bottom of the prepared pan. Cover with a layer of uncooked lasagna noodles, 1/3 of the remaining sauce, 1/3 cup cottage cheese and 1 cup mozzarella cheese.6. Repeat until the ingredients are used up. Cover with aluminum foil and bake until the noodles are soft and the cheese is lightly browned, about 1 hour and 20 minutes. Yield: 8 servings.
